I’ve been busy, so this is the first opportunity to check in on your posts. Your Indian cooking adventure looks very tasty. Years ago (pre-child) I went through a phase of cooking Indian food and had bottles and bottles of spices. I remember grinding up and mixing long long lists of them to make a recipe. The dishes you wrote about seem very do-able for when I want a change, especially the potato cakes. Sort of Indian latkes! The desi pasta is interesting—wonder why Indians would like Italian food? Well, dumb question: who doesn’t!

Thanks for checking in. It really has been fun making all these Indian dishes. I always thought Indian food was really time-consuming, but these are all quick and easy. There are a few more to be published over the next two weeks. Try the pasta, it’s delicious! I’m over-indulging in cardomom kulfi though. Bad…
