My friend in Hong Kong, Lau Wing Suan Joycelyn, can’t seem to stop cooking! If you’ve tried making her fried jumbo won tons on World Foodie Guide, then you will love these fried shrimp balls, Cantonese-style of course. They sound simple enough to make, even for me!
Ingredients:
- 4 slices of sandwich bread
- 1/2 oz pork
- 4.8 oz shrimp
Seasoning:
- 1/4 teaspoon salt
- few shakes of pepper
- 1/2 teaspoon egg white
- 1 teaspoon cornflour
What to do next:
1. Remove crust from bread and dice
2. Clean, dry and dice the pork
3. Remove shells, clean and dry shrimps. Dice 2/3 of the shrimps and roughly mash the rest
4. Mix shrimps and pork well. Add seasoning and beat thoroughly
5. Divide mixture into 10 equal portions
6. Make each portion into balls using 2 wet teaspoons. Press each ball in diced breadcrumbs, making sure that it is evenly coated
7. Deep fry shrimp balls in hot oil until golden brown

These sound really good and I’ll bet they’d be good rolled in toasted sesame seeds right after they’re fished out of the oil! I’ll have to put this in my appetizer file and do these up one night.
