How To Make Chinese XO Scallops with Noodles (Recipe)

This is a quick and easy meal that can be rustled up in 15 minutes. It’s based around one delicious ingredient, XO sauce, a spicy seafood sauce from Hong Kong, containing dried scallop, shrimp, fish, chilli, garlic and oil. I came up with the recipe this lunchtime after craving the taste of XO. But you can ‘XO’ anything you want! Just experiment.

    Dear Pang Yuet Ling,

    The picture of the scallops and noodles with XO sauce looks good to me. Adding a couple slices of ginger will give it more flavour.

    What do you think ?

    Dear Mummy, thanks for the tip! I completely forgot to add ginger as I was just making up the recipe as I went along. I’ll try it again next week, as I’ve just bought more scallops. Thank you! Love Pang Yuet Ling
